Toushe Mumbri- Cucumber Dosa

Mumbri is dosa (pancake) made of samolina. The plain mumbri is sweet and spicy. My Mother used to prepare variations by adding different vegetables. One of such variations is Cucumber Mumbri which is spicy. I love these soft mumbri with fresh flavor of cucumber.

Ingredients:

2 cups Rawa (Samolina)
1 salad cucumber
1 big onion
Curry leaves
Fresh coriander leaves
1 small piece of ginger
3-4 green chilies
Salt to taste

Oil to make mumbri

Method:

Grate cucumber. Finely chop onion, curry leaves, coriander leaves, ginger and green chilies.

Mix all ingredients. Add water to make a pancake batter. Keep aside for 20-30 mins so that rawa soaks well.

Heat pan, spread a teaspoon oil and make mumbri the way you make pancakes.

Serve hot with ghee or coconut chutney.
